Ever wondered why the morning after your birthday party seems so sweet? Apart from the sweet memories, you also have some leftover cake in the fridge which you gulp down with your morning coffee. But not all mornings are such sweet, as we can’t indulge in a frost creamy cake every day. So why not whip up a cake especially for accompanying your morning coffee? this mildly sweet version of cake can not only satisfy your early morning sweet cravings but also kick start your day on a rather sweet note. So here we go with a coffee cake recipe that is the easiest yet tastes heavenly.
For Cake:
- 3 3?4 cup all-purpose flour
- 3 cups of milk
- 3/4 cup granulated sugar / brown sugar
- 3/4 cup sour cream
- 3 teaspoons baking powder
- 1 cup butter ( room temperature)
- 1 spoon kosher salt
- 1 spoon vanilla extract
- 1 1/4 cup milk
- 4 eggs
For Crumb:
- 1 cup all-purpose flour
- 1 spoon ground cinnamon
- 1 cup melted butter
- 1 cup light brown sugar
For Filling:
- 1 spoon ground cinnamon
- 3/4 cup all-purpose flour
- 3/4 cup brown sugar
Procedure:
- Preheat the oven at 350 degrees and set the baking tray by spraying it with non-stick spray.
- Prepare the filling by combining ground cinnamon, flour, and brown sugar. Mix well and set aside.
- For preparing the crumb, mix flour, ground cinnamon, melted butter, and sugar until crumbs are formed. Mix it with hands if necessary.
Now, for the cake,
- Mix oil and sugars in a bowl and whisk it thoroughly with the help of a blender until fluffy.
- Now, add eggs, baking powder, milk, kosher salt, vanilla essence, and butter slowly while whisking simultaneously.
- As the mixture is smooth enough, gradually add flour in batches and whisk it on a normal speed until everything is combined well.
- Transfer half of the batter to the baking tray.
- Add the cinnamon filling on it and spread it evenly.
- Spread the remaining half of the cake batter on the filling.
- Add the crumbs on top of the cake and spread it evenly.
- Transfer the tray to the preheated oven and bake it for 40-45 minutes.
- Once the time is up, check the cake if it sticks to the toothpick and the cake is ready if the toothpick comes out clean.
- Note: For an icing version for this cake, add 3 tablespoons of milk and 4 tablespoons of icing sugar and you can use this as icing for the cake.
- Generally, coffee cakes are sans icing.
- Let it cool down completely, and store it in an airtight jar wrapped in a foil, as this cake dries up more quickly than any other cake.
